As the weather gets warmer and warmer, it’s time to create some refreshing cocktail recipes for those warm weekends ahead of us. Cucumber Mint Lemonade is delicious left alone, but add a “boozy” element and it’s officially a party! This recipe is light, refreshing and perfectly sweet. Here’s how we did it:
The ingredients
Vodka
2 bags of lemons
1 cucumber
2 mint leaf stems
water
sugar
raspberries (for garnish)
Directions
Our simple syrup is 1 part water and 2 parts sugar. Bring the water (about 1 – 1.5 cups) to a boil and add sugar to water. Allow the sugar to dissolve completely and add mint leaves and cucumber slices to the pan. Let it boil together while flavors infuse for about 10 minutes.
Juice 2 full bags of lemons and add the strained simple syrup to the lemon juice.
Add vodka. I would say about 1/4 of the volume of the lemonade is perfect, but some like it stronger and some like it weaker. You be the judge! – Mix it all together with a whisk.
Garnish with cucumber slices, mint leaves and raspberries. Put your feet up and enjoy!
