I love it when a plan comes together!
What that means in the “blogging world” is that I really love it when I get to work with brands I’ve enjoyed all my life. Juicy Juice® is what I had in my lunchbox when I was growing up and since I loved it as a kid, Juicy Juice® is what I put in my boys’ lunch boxes today. So, when they reached out about working on a recipe post I jumped at the chance.
Their website has a ton of awesome recipes and they gave me a pick of any that I might want to try out. My choice? Apple Spice Muffins! These are going to be a regular occurrence in our house this fall and they make a great after school snack. You have to give them a try. Another you should totally be making– Apple juice pork chops? Let’s start by rehydrating a few dried apples. Give them a rough chop and then place in a saucepan with the apple juice. Bring to a boil, reduce heat to low and simmer until the apples have plumped and the liquid has evaporated.
Set the apples off to the side and allow them to cool down completely. In the meantime, mix together the cake mix, water, eggs, and applesauce. Stir until evenly combined.
Once smooth, add in the rehydrated apples and fold with a rubber spatula until evenly combined.
Line two muffin tins with paper wrappers and then fill 3/4 of the way up with the batter.
Chip Tip: For even muffins, use a medium-sized ice cream scoop to portion out the batter into each muffin cavity. Top each with a thinly sliced apple wedge.

Bake for about 18 to 20 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and allow your apple spice muffins to cool down completely before eating.
Once cooled, you can serve them as is or give them a light dusting of powdered sugar before eating.
You can also mix store bought vanilla frosting with a pinch of cinnamon and frost each muffin if you want something sweeter.
Store any leftovers in an airtight container or plastic bag at room temperature. Will keep for about 2 to 3 days on the counter or about 4 to 5 days in the fridge.
- 1 cup Apple Juicy Juice® 100% Juice
- 3/4 cup sliced dried apples coarsely chopped
- 1 box (18.25 ounces) spice cake mix
- 1 cup water
- 3 large eggs
- 1/3 cup unsweetened applesauce
- Place the Juicy Juice® and apples in small saucepan. Bring to a boil; reduce heat to medium and cook for 15 to 17 minutes or until juice has evaporated. Cool to room temperature.
- Preheat oven to 350° F. Grease and lightly flour 13 x 9-inch muffin pan. Set aside.
- Combine cake mix, water, eggs and applesauce in large mixer bowl. Beat at medium speed for 2 minutes. Fold in apples. Pour into prepared pan.
- Bake for 15 to 20 minutes or until wooden pick inserted in center comes out clean. Remove from oven and allow to cool completely before cutting and serving.
