With back to school upon us I thought it would be fun to show you a cool idea to make your kids feel special. I call this the Back to School Breakfast because it takes some of our favorite breakfast foods and turns into a cute little treat for your kids. Watch the video to see how to make it! ~Rachel
- 2 cups pancake mix
- 1 1/2 cups cold water
- 2 tablespoons oil
- 2 cups pancake mix
- 1 1/2 cup cold water
- whipped cream
- blueberries
- orange slices
- Mix the waffle batter until smooth. Grease a round waffle maker and heat it up. Scoop out the waffle batter into the hot waffle iron and cook until golden brown. Continue until all the waffles are cooked.
- Mix the pancake batter in a separate bowl. Heat a griddle or skillet over medium-high heat. Grease it liberally and scoop out the pancakes into a silver dollar size. Cook until golden brown on both sides.
- To assemble the owls, lay out two pancakes on top of a waffle. Add a bit of whipped cream to each pancake and top with a blueberry on each, for eyes. Add a triangle wedge of orange for the beak. Serve with maple syrup. Enjoy!
