Key Lime Pie Cheesecake Pops

Key Lime Pie Cheesecake Pops are a combination of two desserts. Key Lime Pie and cheesecake in a popsicle form! Cool off this summer with these icy treats!

Ingredients
  

For the filling

  • 1 8 oz block cream cheese, softened
  • 1/4 cup sour cream
  • 3/4 cup powdered sugar
  • 1/3 cup whole milk
  • 1/4 cup key lime juice
  • 1/4 cup key lime pie filling

For the crust layer

  • 6 graham cracker rectangles
  • 3 tablespoons melted butter
  • 1 tablespoon sugar

Instructions
 

  • In a large bowl, cream together all of the filling ingredients until smooth.
  • Crush the graham crackers in a food processor until it resembles fine crumbs. Pour into a bowl and stir in the melted butter and sugar.
  • Fill a popsicle mold about 3/4 of the way up with the cheesecake filling. Top with the graham cracker mixture, patting down to create a tight even layer. Place the lid on top of the mold and stick a popsicle stick into each popsicle.
  • Freeze for at least 6 hours or overnight.
  • Run the mold briefly under warm water to unmold.
