Instructions
Combine the sugar, water and rosemary sprigs in a small sauce pot. Place over medium heat and bring to a simmer. Boil for about 5 minutes and then remove from heat. Allow to cool completely.
In a small dish, combine the sugar and grapefruit zest. Run a lemon wedge along the edges of each glass. Dip the glass, upside down, into the sugar and zest mixture to coat the edges. Fill with ice and set side.
Fill a large cocktail shaker with lots of ice. Add in the grapefruit juice, a splash of simple syrup (as much as you'd like) and the gin. Place the lid on and shake it vigorously. Pour into the glasses, about halfway up and then top off with club soda. Garnish with grapefruit wedges and a sprig of rosemary. Enjoy!
