Preheat oven to 350 degrees
Sautee celery and onions in butter over medium heat
Add in cranberries and chopped pecans until cooked through, set to the side
Bring three cups of water to a simmer and add in stuffing mixture. Mix until fluffy
In a large mixing bowl combine stuffing, celery mixture and eggs. Mix well.
Spray your bundt pan with non-stick cooking spray
Pour stuffing into bundt and use a spatula to press it firmly into place
Bake for 45 minutes or until a knife inserted in the center comes out clean and the whole cake feels firm.
Allow to cool for ten minutes before flipping onto a plate. Serve warm.
