Turkey Lettuce Wraps

Have a healthy meal with these Turkey Lettuce Wraps. Ground turkey in a hoisin sauce, cooked with veggies and served in lettuce cups!

Ingredients
  

  • 1 tablespoon olive oil
  • 2 pounds ground turkey
  • 1 red onion diced
  • 3 garlic cloves minced
  • 1/2 cup scallions sliced
  • 2 medium carrots diced
  • 2 large celery stalks diced
  • 1 orange or yellow bell pepper diced
  • 1 cup savoy cabbage shredded
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 to 2 teaspoons sriracha
  • 1 large iceberg lettuce head leaves carefully removed

Instructions
 

  • Heat a large skillet over medium-high heat with 1 tablespoons oil. Add the ground turkey and cook, breaking it down with a wooden spoon, until browned and crispy. Stir in the red onion, garlic and half of the scallions. Toss and cook for about 3 minutes to soften.
  • Add the remaining veggies and cook for another 5 minutes until tender. Mix in the hoisin, soy sauce, sriracha, salt and pepper. Cook for 1 to 2 minutes to thicken the sauce. Serve in lettuce leaves with the remaining scallions as garnish.
