I have the world’s best Mother-In-Law. I’m not kidding. She raised the best man I know, is sweet and unconditionally loving and at a family gathering last year she brought this cake that became my new obsession. My husband’s Grandmother Jessie passed this recipe down to her Daughter-In-Law,Alice, and then Alice(whom I now call Mom)passed it down to me. I never got to meet Grandma Jessie but Jake says I would have loved her and I’m guessing he’s correct because anyone that makes a baked good that’s this delicious is my kinda gal. I hope you bake this, pair it with a cup of coffee and spend some time with someone you love.
What You Will Need-
FOR THE CAKE:
Bundt Baking Pan
1 Yellow Cake Mix
1 Box Jello Instant Vanilla Pudding
4 Eggs
1 Cup Sour Cream
1/2 Cup Vegetable Oil
1/2 Cup Cooking Sherry OR 1/2 Cup Water(whichever you prefer)
1/4 Cup Poppy Seeds
FOR THE ICING:
1 Tablespoon Melted Butter
1 1/2 Tablespoon Milk
1 Tablespoon Lemon Juice
1 1/4 Cups Powdered Sugar
Lemon Zest
Mix together all ingredients for the cake EXCEPT for the poppy seeds.
Add the poppy seeds and mix thoroughly for about 2 minutes.
Make sure to spray the Bundt really well with cooking/baking spray. My Aunt gave me a floral Bundt so I really have to make sure and get into those crevices.
Poor batter into greased pan.
Bake @350 Degrees for 50 minutes or until inserted toothpick comes out clean.
Make sure to flip the cake onto a cooling rack and place over a cookie sheet or tea towel so that when it drips you won’t have a big mess to clean up.
Let the cake cool while preparing the icing.
Note: I left the Icing at room temperature while the cake was cooling. If it hardens-you can pop it in the microwave for a couple of seconds to thin it out again.
Mix together the melted butter and milk. Add lemon juice. Make sure the liquid is mixed well. Slowly add the powdered sugar into the wet mixture. Mix well and make sure there are no clumps. Add the zest into the mixture.
Slowly spoon the icing over the cooled cake. There is no special method to this and the icing will do the work on it’s own while running down the cake.
