The secret to the best grilled steak? The best marinade!!!
Oh, and also, not cooking it for too long and allowing it to rest before you cut it. Also, cutting against the grain. Actually, there are a few tips you should know if you want to create the best grilled steak. Check them all out below!
Begin by putting together the marinade. You’ll want to do this in a large plastic food storage bag because it’ll be easier to marinate the meat in and make clean-up a breeze.
Add the steak into the bag with the marinade, release the air, and then seal the bag. Massage the marinade into the steak and then place it in the fridge for at least 1 hour or Jonathan tells me only up to 4 hours. But I’ll tell you what guys, I think any good marinade is better if you let it hang out overnight. But that’s just my opinion.
Use oil or non-stick grill spray to prep your grates. Next heat your grill or a stovetop grill pan over high and then once hot, place the steak on. Grill for about 4 to 6 minutes on the first side, or until charred. Flip over and cook for another 4 to 6 minutes on the second side, depending on how you like your steak cooked. If you want it well, cook longer but a good steak should be pink in the middle. Again, just my opinion.
Transfer your perfect grilled steak onto a cutting board and let rest for about 10 to 15 minutes. This will allow the juices to redistribute into the steak and ensure that they don’t just release when you cut it. Once it has rested, slice against the grain to make it easier to chew. Against the grain means in the opposite direction of that natural striations in the meat.

- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 4 garlic cloves, minced
- 2 large oranges, juiced
- 3 teaspoons salt
- 2 teaspoons black pepper
- 2 tablespoons chopped fresh oregano
- 2 pound flank steak
- In a large resealable plastic bag, combine all of the ingredients together, including the steak. Seal, removing the air from the bag and then massage the marinade into the steak. Let marinate in the fridge for at least 1 hour or up to 4 hours.
- Heat an outdoor grill or stovetop grill pan over high-heat. Once hot, grill the steak for about 4 to 6 minutes on the first side, or until charred. Flip over and cook for another 4 to 5 minutes on the second side, depending on how you like your steak cooked. Remove from heat and let rest on a cutting board for about 10 to 15 minutes before slicing and serving.
