Cheesecake is my all time favorite dessert. However, making cheesecake is really difficult for most. That’s why we have a bit of a Cheesecake “cheater” recipe that’ll fulfill your cheesecake craving without the hassle of making it from scratch. Did I mention it also has a crispy cookie-like topping with apples and caramel drizzle?
Side Note: I loved this recipe so much that I actually had a dream that I was eating a piece of this dessert last night. (My subconscious must have remembered that I needed to put this post together today). Needless to say, it was a good dream!
Here’s how to put this dessert together.
(No Bake Cheese Cake) – Ingredients:
-1 Box of Jello No-Bake Cheesecake
-Butter – per package instructions
-Milk – per package instructions
-Cream Cheese (1/2 a stick) – room temperature
Directions:
To make the cheesecake crust and filling, follow the directions on the “No-Bake Jello Cheesecake box.” The only modification we made was we added 1/2 stick of Philadelphia cream cheese (room temperature) to the filling to make it extra creamy.
Make sure to grease the pan with a bit of butter. We put our cheesecakes in little individual pans, but you can definitely make this in one large pan.
Press the crust mix (from the Jello No-Bake kit) in the bottom of the pan.
Fill the pan(s) with the cheesecake filling. Leave a bit of room on top for the topping. Refrigerate for 30 minutes.
(Apple Topping) – Ingredients:
-2 chopped green apples
-1/2 cup brown sugar
-1/2 cup water
-2 tbs. butter
-1/2 tbs. cinnamon
Directions:
Chop two apples in small cubes.
Melt the 2 tbs of butter at the bottom of a hot pan. Add the chopped apples in and sauté. Once the apples are warm, add 1/2 cup brown sugar, 1/2 tbs cinnamon and 1/2 cup water. Simmer mixture until the apples are mush. Allow to cool until the mixture is room temperature.
(Crisp Topping) – Ingredients
– 1/4 cup of Granulated Sugar
– 1/4 cup of Dark Brown Sugar, packed
– 1/2 cup of All Purpose Flour
– 1/2 cup of Oats
– 1 tsp of Cinnamon
– 4 tbs of Butter, Cold
Directions:
To prepare the crisp topping, combine all ingredients into a large bowl and break into crumbles with fingers, make sure it’s well mixed.
Spread the mixture out on a small cookie sheet (lined with foil) and bake in the toaster oven for 15 minutes at 350 degrees.
Put the parts together:
Once the cheesecakes and apple mixture are cooled, spoon some apple mixture on top of the cheesecake mixture.
1. drizzle some caramel syrup on top of the apple mixture
2. Put a layer of crisp topping on top
3. Finish with another drizzle of caramel syrup
