In the Hollis house we’re HUGE fans of the PB&J.
It’s true… our peanut butter consumption is single handedly keeping Skippy in business.
Since the boys are such huge fans I’m forever trying to incorporate the flavor combo into other things like Breakfast or in this case, cake. I wanted to create something that was unique and fun but wouldn’t take you nine years to create. I used a box cake mix and doctored it up a bit, but the end results taste like something heartwarming and homemade!
Here’s What You’ll Need
1 Box of Yellow Cake Mix
1 Cup of Water
1/2 Can of Evaporated Milk
1/2 Cup of Peanut Butter
2 Eggs
My Peanut Butter Buttercream for the Icing
Jelly (flavor of your choices)
PreHeat Oven to 350 degrees. Mix together all batter ingredients with an electric mixer.
Place cupcake liners in tray and fill to a little over 1/2 way (these rise quite a bit so don’t over fill your cups). Place in the oven and bake until a toothpick or a knife inserted into the center comes out clean (about 12-15 min). I create both big and mini cupcakes and you should feel free to do either.
Allow cupcakes to cool completely then spread a small spoonful of jelly on top… I used strawberry.
Ice with peanut butter butter cream and top with a mini Nutter Butter!
