Yes, you read that right… these are Key Lime pie cheesecake pops and they’re as delicious as they are adorable. This creamy, tangy, sweet dessert makes the perfect summer treat and you should totally serve it at your next party so all of your friends think you’re super fancy!
We start by getting our popsicle sticks ready. This is an optional step, but I think it’s darling to include because it completely transforms plain popsicle sticks to a cute accessory in just minutes!
Make the filling for your cheesecake pops by combining the cream cheese, sour cream, key lime juice, key lime pie filling and sugar until smooth.
Pour the filling into the popsicle mold, dividing it evenly among each popsicle and leaving a little space on the top of each for the graham cracker layer.
Because these are cheesecake pops, we’re going to need that crust layer. Mix together the cracker crumbs, sugar and melted butter. Then spoon it on top of each popsicle, making sure to pat it down to create a tight crust.
Place the lid on the popsicle mold and then insert our cute popsicle sticks into each.
Freeze until firm, at least 6 hours or overnight. This is a great treat to make the night before and then you can have your key lime pie cheesecake pops ready the next day. They’re perfect as a summer treat on a hot day!
- 1 (8 oz) block cream cheese, softened
- 1/4 cup sour cream
- 3/4 cup powdered sugar
- 1/3 cup whole milk
- 1/4 cup key lime juice
- 1/4 cup key lime pie filling
- 6 graham cracker rectangles
- 3 tablespoons melted butter
- 1 tablespoon sugar
- In a large bowl, cream together all of the filling ingredients until smooth.
- Crush the graham crackers in a food processor until it resembles fine crumbs. Pour into a bowl and stir in the melted butter and sugar.
- Fill a popsicle mold about 3/4 of the way up with the cheesecake filling. Top with the graham cracker mixture, patting down to create a tight even layer. Place the lid on top of the mold and stick a popsicle stick into each popsicle.
- Freeze for at least 6 hours or overnight.
- Run the mold briefly under warm water to unmold.
