I absolutely love sweet tea.

In fact, my grandma’s sweet tea recipe is a favorite both here on the site and in my upcoming cookbook. And since summer is so close I thought it would be fun to turn my favorite drink into my favorite dessert! Check out these sweet tea popsicles. They’re perfect for a day by the pool or as the dessert for your next summer party.

Start by making a basic simple syrup to sweeten the tea. A simple syrup is made by simmering together equal parts water and sugar. Remove from heat and let cool to room temperature.

In a large pitcher, pour boiling water in and drop in 4 to 5 tea bags, depending on how strong you like your tea. Allow to steep for 10 to 15 minutes, or as little or long as you’d like. Let cool to room temperature as well, and then stir in as much simple syrup as you’d like.

Pour the sweet tea into a popsicle mold, leaving a little bit of space at the top to allow for expanding during freezing. Place the lid on and stick in the popsicle sticks. Freeze for about 4 hours or overnight.

To unmold easily, run the bottom of the popsicle mold under warm running water, then gently lift up each popsicle.

You can add fresh fruit or berries to these popsicles before freezing, or add fresh lemon juice if you like lemon ice tea. They’re super easy to customize!

Ingredients
  1. 1/2 cup granulated sugar
  2. water
  3. 4 to 5 tea bags
  4. fresh fruit
  5. lemon
Instructions
  1. In a medium saucepan, combine 1/2 cup sugar with 1/2 cup water. Bring to a simmer, over low heat, and cook until the sugar has completely dissolved. Remove from heat and set off to the side to cool until room temperature.
  2. In a large pitcher, combine 4 to 5 cups boiling water with 4 to 5 black tea bags. Stir and let cool to room temperature. Once cooled, stir in as much simple syrup as you'd like.
  3. Pour the tea into a popsicle mold, leaving a little bit of space on the top for expanding during freezing. Place the lid on and stick in the popsicles sticks. Freeze for about 4 hours or over night. Run the bottom of the popsicles under warm running water to make it easier when removing the popsicles.
