As moms we worry everyday if our kids are eating enough and getting all the nutrients they need to tackle the day. We think about calories and portion control, and whether or not they’re getting all the food groups in.
Well what about us? Most of the time I feel like I’m running around with my hair on fire. I don’t take a ton of time to think about or plan my meals… who has time for that?
Years ago someone said to me, would you ever feed a child the way you feed yourself? It knocks me for a loop every time I think of it. Usually the easiest thing to do is just not eat. We live off of snacks or the tail end of their chicken nuggets. We reach for the boxed mac n’ cheese or the PB&J because it’s easier. I’ve realized over the last nine years of being a mom that its way too easy to reach for the unhealthy option. The key –Ive discovered– is having a game plan of healthy recipes ready to go in advance. That way there’s no question about what I’m Sgoing to choose… I have an arsenal of great ideas to pull from. Seriously though, soup is possibly my favorite meal of all time. During the week I need my go-to lunches super easy to make and delicious! That’s why storing soup in my cupboard (both at work and at home) is essential! I put it on the stove for 5 minutes (or in the microwave) while I answer some emails and it’s ready in no time.
