It’s the time of year when our herb gardens start to really produce the best of the season, and they produce alright… in mass quantity! And even if you don’t have your purchasing your fresh herbs instead of growing them yourself, chances are you never use the whole bunch and very few things are as depressing as wasted basil!

I discovered this little trick last spring for saving fresh herbs until you’re ready for them and I had to share it with you all. It’s so simple and it will keep your favorite dishes infused with fresh ingredients long after herbs are out of season!

You can use any herbs that you love (or have on hand) just be sure to wash them first.

Prep your herbs by cutting them down so they’re small enough to fit into ice cube trays without over chopping.

Fill your cube about 1/2 full of herbs… I sort my by individual herbs but if you like certain blends you can certainly pair them together. Fill the cube the rest of the way up with olive oil or melted butter.

Freeze your tray and you’ve got the perfect starter when sautéing veggies, meat, or making a sauce or a soup.

To store them, simply label freezer bags with what’s in each and store until you’re ready to use!
