A mojito was one of the first cocktails I tried when I turned twenty-one. I imagine I’m not alone in my love for this drink since it’s sweet and refreshing and tastes like a vacation in a glass. During the summer there’s almost nothing I’d rather sip on, so I asked Jonathan if he’d come up with a new spin on it for me. And boy did he ever! Allow me to introduce our Cucumber Kiwi Mojito, the best thing to happen to fresh mint since the invention of toothpaste. Start by peeling and slicing a few fresh kiwi. Throw the slices into a cocktail shaker along with the cucumber slices.
Squeeze in some fresh lime juice, and add a few sprigs of mint and a couple teaspoons of sugar.
Using a muddler or a spoon, smash everything together to release all of the flavor and to break it all down.
Fill with ice and pour in the rum. Cover it and shake vigorously until the shaker becomes frosted.
Pour the cocktail (straining it to avoid all of the pulp from the fruit and mint) into a few cocktail glasses that have been filled with ice.
Top each drink with a bit of club soda or sparkling water. Garnish with a mint sprig, lime slice and kiwi slice! That way people know what they are drinking.
Our cucumber kiwi mojito is the perfect summer cocktail with a fresh fruit twist. The cucumber and kiwi are refreshing and go so well together with the mint and lime juice!
- 1 lime, juiced
- 1 tablespoon sugar
- 2 ripe kiwi, peeled and sliced
- 1/2 a medium cucumber, peeled and sliced
- 1/4 cup fresh mint leaves
- 1 lime, sliced
- 2 ounces rum
- club soda
- ice
- Add the lime juice and sugar into a cocktail shaker. Swirl around and allow to dissolve for a minute.
- Throw in the kiwi and cucumber slices into a cocktail shaker along with the mint. Muddle with a spoon until completely broken down. Add the rum and fill with ice. Cover and shake vigorously for few seconds until chilled. Strain into two glasses (filled with ice) and top each with club soda. Garnish with mint, kiwi slice and lime slice.
