The only thing I love more than Thanksgiving is Thanksgiving leftovers! Seriously, every year I try and dream up new and cool ways to use them up. Two years ago it with the turkey panini recipe. Last year it was wild rice turkey soup! This year? We’re doing a Thanksgiving shepherds pie and I will tell you right now, it’s delicious!
Start with whatever leftovers you have from Thanksgiving… honestly, I don’t think it’s possible to mess this sucker up!
Sauté your onion and the package of frozen veggies in a tablespoon of butter over medium heat. Next dice your leftover turkey and add it to the mix.
Stir in a cup of leftover gravy and mix everything until it’s warmed through.
Now it’s time to layer up! Put your turkey mixture in the bottom of a casserole dish. Add a layer of leftover mashed potatoes… if you zap them in the microwave for thirty seconds or so it will be easier to spread.
Now add your leftover Stove Top stuffing as a layer… just like with the mash, they’ll be easier to work with if you warm them a bit first.
Now put into the oven and bake at 350 until everything in your Thanksgiving shepherds pie is heated and the stuffing is just a little crunch on top — about twenty minutes.
This turned out so, so, so yummy! I ate it with a little dollop of cranberry sauce on the side.

- 2 cups of leftover turkey - diced
- 1/2 an onion - chopped
- 1 8 oz package of frozen vegetable medley
- 2 tbls of butter
- 1 cup of leftover gravy
- 2 cups of leftover mashed potatoes
- 2 cups of leftover Stove Top stuffing
- Preheat oven to 350
- Saute celery and onion in butter over medium heat for about five minutes
- Add in chopped turkey and gravy - heat through
- Layer turkey mixture into the bottom of a casserole dish
- Add a layer of mashed potatoes
- Add a layer of stuffing
- Bake until cooked through and stuffing is slightly crispy on top - about 20 minutes
