We’re always on the lookout for something new to put into our slow-cooker. When this Green Chicken Chili came to mind, we jumped at the chance to make it and share it with you guys. It’s super easy to make, with only a handful of ingredients, but it’s absolutely delicious. Give it a try!
This is the type of slow-cooker recipe where you just throw everything into the bowl and set it low and slow.
In case you aren’t sure what tomatillos are, they’re those small green tomato-looking things that are wrapped in a husk. I’m sure you’ve seen them at the grocery store before!
Once the chili has cooked and you’re about ready to serve, take a potato masher and smush it all together to break down the chicken into smaller pieces.
Serve the chili in bowls and top it with sour cream, cheese and cilantro. Or any other of your favorite chili toppings!
Serve it with cooked long grain rice or a side of tortillas to complete the meal. Turn the leftovers into tacos, burritos or even quesadillas for a new take on last night’s dinner!
This is a great recipe to set up early in the morning before heading into work. Just combine all of the ingredients and set the slow-cooker on low. You can keep it cooking until you come home and are ready to serve dinner.
- 2 pounds boneless chicken breasts, diced
- 2 pounds tomatillos, rinsed and husked
- 4 to 6 Anaheim chili peppers, seeded and diced
- 1 jalapeño, seeded and minced
- 1 large yellow onion, diced
- 3 garlic cloves
- 3 cups chicken stock
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 lime, juiced
- sour cream
- cheese
- cilantro
- tortillas (for serving)
- Combine all of the ingredients in the bowl of a slow cooker (except the toppings, of course). And cook on low for 6 to 8 hours or on high for 2 to 4 hours. Right before serving, take the back of a spoon or a potato masher and break down the chicken into smaller pieces. Garnish with desired toppings and enjoy.
